Jerusalem artichokes, also called sunchokes, are knobby root vegetables from the sunflower family with a nutty, slightly sweet flavor, tasting like a cross between a potato and an artichoke. They can be eaten raw (thinly sliced in salads) or cooked (roasted, mashed, sautéed, or pureed) and are rich in iron, potassium, fiber, and inulin, a prebiotic fiber that supports gut health but can cause gas in some people.
