With thin white stalks and pungent green leaves, bunching onions (or scallions) are easy to grow, take little space, and have a multitude of uses in the kitchen. Plant them among your summer greens and harvest both for a tasty salad.

Onions prefer fertile soil with an abundance of regular water for best growth. They are shallow-rooted, so keep them well weeded to prevent competition. Sow in early spring as soon as the soil can be worked and plant successive crops every few weeks for a continuous supply.
Harvest when the tops are about 6″ tall. Gently loosen the surrounding soil and pull carefully to avoid damage. They do not keep well, so use them right away.
