Also known as bok choi or bok choy, pak choi is a staple in Asian cuisine. It grows quickly and easily into a small plant resembling Swiss chard. The sweet, crispy stems are enjoyed fresh and cooked.

Pak choi grows best in fertile soil with plenty of moisture for quick growth. In mild climates, plant in fall for winter harvest. In cold climates, start in early spring as soon as the soil can be worked and again in late summer for fall crops.
Remove side stems as needed, or harvest the entire plant by cutting close to the ground. Plant a second crop in late summer for a fall harvest.
